im Wein findet man doch einiges, Zitat aus demselben Paper:
The isolates from these wines were acetic
bacteria, yeasts and some rare lactic bacteria. No culture
of either lactic bacteria (Leuconostoc a?nos) or acetic
bacteria (Acetobacter sp frequently atypical) were
capable of forming 4-ethylphenol (Table 9). Among the
yeasts isolated were, Saccharomyces cerevisiae (bayanus),
Saccharomyces cerevisiae (cerevisiae) and more rarely
Pichia sp and Candida sp, which are also incapable of
forming the ethylphenol. The only yeasts which have
revealed themselves capable of synthesising the 4-
ethylphenol from the p-coumaric acid are the
Brettanomyces f Dekkera, which were identified by the
classical biochemical tests.
Es wird ja nicht umsonst SO2 zugegeben, um die Aktivität solcher Organismen zu unterdrücken. Bei Weinen mit hohem pH-Wert hat man aber wenig freies SO2 - die sind entsprechend besonders empfindlich und sollten zumindest immer kühl gelagert werden.
Der Kork spielt aber sicher auch eine Rolle bei Flaschenvarianzen. Bei stehender Lagerung ist der Korkeinfluß nach meiner Erfahrung deutlich geringer.
