William Fèvre Chablis Grand Cru Vaudésir 2007
Appearance:
Clear, pale golden yellow;
Nose:
Clean nose with medium (-) intensity,
Still in his youth, primary and secondary flavors,
Primary flavors:
Floral notes (Blossoms), green fruit (apple, pear),
Citrus fruit (lemon juice, lime juice, orange peel),
Clear, strong mineral note (wet stone) after some time,
Secondary flavors:
MLF flavors (cream),
Battonage (biscuit, pastry), very dominant and strong, too dominant, sadly overwhelming lots of the other flavors and the complex bukket of the wine (Can it achieve more harmony with age?),
Light oak notes (smoke)
Palate:
(Bone) dry,
(Piercingly) high acidity (After 9 years of aging!!! This wine is very much alive and young!),
Medium alcohol level,
Medium (-) bodied,
Medium intensity on the palate,
Flavors similar to the ones on the nose (MLF notes and battonage flavors are even stronger here, as well as the smoky oak notes (a bit like Sherry Fino), additionally maybe grapefruit flavors (?),
Very good length (!)
Quality: Extraordinary
Ripeness: Could be drunken now, but this wine still has lots of potential
Points: 90/100
Drink: 2017-2025
Very concentrated and really untypical Chablis (MLF, oak, battonage), especially the battonage notes "destroy" a bit the enjoyment when drinking this wine,
Nonetheless it does the name "Chablis Grand Cru" complete justice!
Maybe the battonage flavors will be more integrated after 5 years of more aging and this wine is still too young, but in my opinion it should not seem that raw and unbalanced at this stage (9 years of aging). So I would definitly prefer a more clear, balanced Chablis Grand Cru over this one, although the value for money is good here.
